Tonight I have some friends coming over so I decided to prepare something fun and light.
Stuffed Chicken with Spinach and Feta:

Ingredients:
Chicken breast cleaned
Feta cheese
Chopped mushroom
Chopped sun dried tomato
Olives
Persil & Herbes en Provence
Spinach
Olive oil
Black Pepper/Salt/Paprika
Directions:
Heat the oven at 280 degree. Cut the chicken breast in half like a butterfly. Season with salt, black pepper and paprika.
In a bowl mix the mushroom, feta, sun dried tomato, olives, spinach, herbs and persil.
Put the mix on one side of the chicken and then fold the chicken and close with toothpick, sprinkle olive oil and put in oven for almost 20 min until chicken is cooked (to check if chicken is cooked cut with a knife and see if chicken is white)

I always serve with a fresh salad

Rosted pumpkin
radish
pumpkin seed
Dried cramberry
Olives
Corryflower
Green beens
Nuts

Dressing:
Balsamic and olive oil
You can serve the chicken with rice and yogurt
