Roast Lamb Leg with Vegetables

Welcome back to my channel, Today I am sharing with you how to prepare a roasted Lamb leg for friends and family gathering. This recipe is healthy and doesn’t take time to prepare but it needs like 3 to 4 hours to cook, so if if you are planning on to try it make sure to start ahead. Hope you like it 🙂 Bon Appetite

 
Ingredients:
 
Leg of Lamb
3 carrots
1 cup pumpkin
1 cup of mushrooms
1 cup of green beans
1 cup of sun dried tomatoes
1 cup of nuts
2 potatoes
1 tbs of fresh ginger
1 zest from 1 lemon with its juice
2 green pepper
1 yellow bell pepper
4 pieces of dates
black pepper
cayenne pepper
salt
Cardamon
Cumin
7 spices
Olive oil
 
Direction:
 
First add cumin, cardamon, black pepper, salt, ginger, paprika, cayenne pepper and 7 spices to 4 tbs olive oil and whisk well
 
Marinate the Lamb for at least 1 hour
 
Then put in oven for 2 hours
 
Meanwhile prepare the vegetables
 
After 2 hours remove Lamb from oven add the vegetables and 1 cup of lamb broth, lemon juice and lemon zest, then, return it to oven for another 2 hours or until lamb is so tender.
 
After one hour and half you can add nuts and soft vegetables like artichoke
 
I usually serve it with rice or couscous and a green salad.
